Perfect for grilled shrimp, chicken, or fish tacos!

Servings: 2 Cups
  • 4 Shallots
  • 2” Piece peeled ginger
  • 1 clove of garlic
  • 2tbsp. lime juice
  • ½ tsp. ground corriander seed
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/3 cup olive oil
  • 1 medium mango, chopped
Directions: In a food processor or blender, combine shallots, garlic and ginger. Then add mango and puree for 30 seconds. Add lime juice, coriander seed, salt and pepper. Then process, adding oil in a thin stream while processor is running. Marinate for at least 30 minutes and baste on to seafood or chicken while grilling. Enjoy!
